Bakery Recipes from Samantha's Sweets...

I have a great passion for baking!
    To me, there is nothing better than homespun and sweet!  When families gather, you gotta have a sweet treat for everyone to share.

  My business, Samantha's Sweets has been a wonderful blessing to me. It has enabled me to do what I love for so many years.

  One of the things I love most about what I do is making people smile and being known as the "cake lady."  I get questions about baking all the time and I would love to share with you some great how-to information about BAKING!

Rustic Fruit Pie ~ 
Country Fruity Pie ~ Rustically Sweet!

 A variety of fruits can make a great pie!
    Here I used cherries, blueberries, and apples.
Mix with desired about of sugar; always taste.
Also when using fresh fruit, make a cornstarch mix using 2 tbsp cornstarch and about 1 tbsp warm water, to create a thick mixture, and add to fruit. 


Perfect Pie Crumbles!!!!!!!
Start with butter, margarine, or even shortening and place a few table spoons in a bowl, add equal amounts of sugar and flour a little at a time.  Mix and smash with a fork as you go, adding more dry ingredients if needed, until you get crumbles.  I like to add a little cinnamon or nutmeg for extra flavor. You can use melted butter or cold.  Taste test for desired sweetness.  There aren't really exact measurements here.  
Every good home baker knows it's a pinch of this, a dash of that, etc. 
Pie Crumble Ingredients:
Butter
Sugar
Flour
Spices

~ A great pie crust recipe~
Every home baker needs a great pie crust recipe.  If you don't have one, ask the best pie maker you know for the recipe.

Here's a good one...
2 cups all purpose flour
2 tsp. baking powder
3/4 tsp. salt
2/3 cup butter shortening
1/2 cup milk

Mix dry ingredients,
cut in shortening,
add milk.
Form into ball and chill for a while.
Flour, roll it, fill it, and bake it!

For a quick and rustic looking lattice, just roll out thick stripes, twist and shout...
well, don't shout, place on the pie. ;)




Cover with pie crumbles...


Bake it and eat it!
  I like to start at 350 degrees for 30 minutes, then up to 365 for 20-30 more minutes.  You can't rush a good pie and you have to keep your eye on it!
Always place a pan with high sides underneath for spills and drips!

Homemade Doughnut Recipe~
Here's our family recipe for delicious homemade doughnuts!



3 cups flour
1/2 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. real vanilla extract
1/2 tsp. salt
1 cup milk plus 1 tbsp. milk
1/2 cup melted butter

Mix dry ingredients, add in wet ingredients.  
Mix to form a ball of dough.  Use additional flour if too sticky.  Cover and rest dough for 20 minutes at room temp. 
Roll on floured surface.  This dough is very nice if mixed correctly.  You can even just use your hands to push it instead of rolling, (like my daughter does.)

Cut out your doughnut shapes!

Fry em' up in oil about an inch deep at medium heat.  Be sure to test one first.  Flip each doughnut when golden brown.

Roll in cinnamon sugar when hot or...
      glaze when cooled with powder sugar water glaze and let dry.

Nutella and Peanut Butter Cookies...




Ingredients:
    Just 6!

1/2 cup Nutella
1/2 cup Peanut Butter (I like Jif)
1 tsp. real vanilla extract
2 heaping tsp. brown sugar
1 cup flour
1 egg



Mix wet ingredients and sugar by hand. 
 No mixer required.
   Sorry KitchenAid


Add flour

Forms a nice dough, roll into balls...


Press down with fork in the traditional peanut butter cookie routine. 

 Bake em'  at 350, until they just start to crack, about 8 to 10 minutes, then EAT!

Want to make delicious and easy
Strawberry Lemonade Cupcakes?

Here's how...

Ingredients:
Lemon cake mix(made according to box)
             I prefer Duncan Hines!!!
Strawberry preserves(preferably home canned)
             We canned delicious homemade strawberry jam!  It makes a world of difference!
Pie Crumbles(flour, sugar, melted butter~mix)

Place a scoop of batter in cupcake liner, spoonful of preserves, another scoop of batter to cover, then...

Top with pie crumbles!!!

Bake 350 until done(clean knife, slightly golden edges, ya know.)


Yummy plain, or...
     with a little butter cream frost...


Display and serve with strawberry lemonade!



~Sour Dough Sugar Cookies by Izzy
These cookies are soooooo good! 
    My sweet baby girl adapted the recipe from an old cookie cook book, adding some sour cream to the mix.  Love them, and they are super easy to make!
Ingredients
1 stick (1/2 cup) softened butter
3/4 cups sugar
1 small egg
2 tablespoon sour cream
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt

1/4 cup sugar for sprinkling on cookies prior to baking

Preheat oven to 350 degrees.

Using a mixer or fork, beat together the butter and sugar until smooth and fluffy. Add in egg and vanilla extract. Blend in the dry ingredients.
Roll into loose balls of dough and sprinkle a little sugar on top.
Place on lined cookie sheets about 2 inches apart.
Bake 8 to 10 minutes until cracked and set.  Don't allow them to get golden brown on edges.  Remove from oven and let cool on cookie sheet.  Store in your favorite cookie tin and ENJOY!!!
Makes about #40 small cookies.

Easy Apple Crumble

Flatten the Snowball Cookies prior to baking, and use some butter cream for a delicious treat!


Turtle Cake Balls!!!
These cake balls are every one's favorite! 
If you already know how to make cake balls then I can tell you how to create these little bites of heaven.

Ingredients:
Chocolate Cake
Caramel Sauce
Pecans
Chocolate for dipping
More pecans for garnish

Directions:
When you create your cake crumbs, use caramel sauce and finely chopped pecans as the binder. This is an incredibly tasty cake ball!

Cherry Pistachio Cookies

Betty Crocker Sugar Cookies in the pouch mix, is a great help when you want a cookie fast and delicious.  Mix as directed for drop cookies and add your own fun ingredients.  The possibilities are endless! 
Tip:  Always add your own REAL vanilla extract, just a dash.

Pecan Praline~
Add 
 chopped pecans covered in melted butter and brown sugar(just enough butter and sugar to coat the nuts.

Cherry Pistachio Cookies~
Add
 chopped candied cherries, chopped pistachios, and a few chocolate chips if desired.

Like I said, the possibilities are endless...
Add colors and sprinkles and have fun!
